How to cook Spaghetti with Swordfish and pesto
- Bring a large pot of water to a boil and add a spoonful of salt. When it starts to boil, add the spaghetti and cook it 1 minute less than the time indicated on the package (or to your preferred level of “al dente”).
- Meanwhile, wash and cut the swordfish into cubes.
- Heat olive oil in a wok over high heat, then add the swordfish. Sauté for about 30 seconds on high heat, stirring constantly.
- Add the white wine to the swordfish and let it evaporate. Swordfish cooks quickly, so continue cooking for 4-5 minutes.
- Add the pine nuts and pesto and reduce the heat to low.
- Add spaghetti and a bit of the pasta cooking water to the wok.
- Cook for another 30 seconds, then it’s ready to serve!
