Zucchini with butter

Zucchini is one of the most popular vegetables in Italy’s Liguria region. It is commonly used in a variety of dishes like soups, frittatas, and salads, and is even incorporated into pasta sauces. Of course, it’s also a staple as a simple side dish.

In Ligurian cuisine, zucchini’s versatility shines through, whether it’s grilled, sautéed, or added to light, fresh dishes that highlight the region’s Mediterranean flavors. Its mild taste pairs perfectly with other Ligurian ingredients like pine nutsbasil, and seafood.

Ingredients:

  • Butter (melt on low heat with 2 garlic cloves, then add a touch of olive oil).
  • Sliced zucchini.
  • Nutmeg (grated or ground).
  • Optional: Parmesan and/or egg.

Instructions:

  1. Sauté the zucchini in the hot butter and oil mixture. After 5 minutes, remove the garlic.
  2. Season with salt and nutmeg.
  3. Optionally, add grated Parmesan towards the end, or crack an egg and allow it to cook with the zucchini.

This side pairs wonderfully with baked salmon or meat patties!
