A simple yet delicious and healthy fennel salad without mayonnaise, made with mandarins or oranges. You can swap the mandarins for oranges or even fresh artichoke, depending on your taste.
For 2-3 servings, you will need:
1 medium fennel bulb, a couple of small mandarins or tangerines, Ligurian Taggiasca olives, olive oil, red wine vinegar, salt, and black pepper.
The fennel can be grated or thinly sliced with a knife. Personally, I prefer it sliced, but in the recipe video, I showed both options.
