If using store-bought puff pastry, roll it out on a baking sheet lined with parchment paper. If making homemade, prepare your dough and roll it thinly.
Peel and slice the apples. Place them in a bowl and drizzle with the juice of one orange. Sprinkle the apples with cane sugar and cinnamon. Mix gently to coat.
Use a fork to prick the pastry in a few places. This helps prevent the pastry from puffing up too much and keeps it from losing its shape during baking.
Spread a thin layer of jam over the puff pastry, sprinkle chopped hazelnuts evenly over the jam. Carefully arrange the sliced apples in a circle and sprinkle them with cane sugar.
In a small bowl, whisk together the egg yolk and cream. Using a pastry brush, carefully brush the surface of the puff pastry with the egg yolk and cream mixture. This will give the pastry a golden and shiny finish when baked.
Preheat your oven to 180°C (350°F). Bake the pastry for about 30 minutes or until it turns golden brown and crispy. Keep an eye on it to make sure it doesn’t overcook.
